This hangiri is a traditional tub used to mix sushi rice and is made from Japanese cypress wood from Nagano prefecture. The tub is handmade by artisans from carved and shaped slats of cypress wood bound by copper bands. A hangiri is an important tool to have when making sushi rice. The large, flat surface allows for even seasoning and cooling and the wood absorbs excess unwanted moisture. It is recommended pre-soaking the tub with water before each use. This will cause the wood to expand and create a secure fit for the copper ring.
